Four years ago I agreed to make a box of chocolates on behalf of my dear friend, food writer Xanthe Clay.
As a food celebrity Xanthe had been approached by a charity called Galvins' Chance to produce a box of chocolates that would be marketed online and then auctioned. Our box of chocolates was to be alongside other food celebs creations to raise money to support disadvantaged youths entering the hospitality world for their world class training. Xanthe came to my workshop and brought some inspiring ingredients and her presence just got my foodie brain whirring so much that by the end of the day we had created a box of chocolates that we were both extremely proud of. I remember the pigs blood bonbon particularly well!
