We kicked off Chocolate Week with an invitation to Clifton High Schools Marquee Week where we were given centre stage for the morning to present The Science of Chocolate.
Partnering up with the school Chemistry department we covered the subjects of crystal structure in tempering and the molecular structure of ganache. We had Rosie and Lucy from Year 9 demostrating how they made ganache and hand rolling truffles which were then passed around and eaten!
Once the science was over we got everyone hands on with a pop up chocolate class. A fabulous way to start a Monday morning in school we thought!!
